Why I’m Romanticizing Dinner on a Budget
There are nights I just want to feel normal. Like we’re not budgeting every second, stressing about IVF cycles, or worried about the next big expense. Chicken Parmesan might seem small, but sitting down as a family and enjoying something warm and comforting — it matters.
This is Week 3 of my budget meal plan series, and it might be my favorite. It includes some of our family’s go-to comfort meals and still comes in under $100. Win-win.
Week 3: Budget Dinners that Feel Like a Treat

Day 1: Chicken Parmesan with Pasta
Uses: Chicken, pasta, tomato sauce
Buy: Mozzarella, Parmesan, breadcrumbs (or crushed crackers)
Directions:
Bread and either pan fry or bake chicken. Top with sauce + mozzarella, then bake again until bubbly. Serve with pasta and a veggie side.

Day 2: Ground Beef Stir-Fry with Rice
Uses: Ground beef, rice
Buy: Stir fry veggies, soy sauce, garlic
Directions:
Brown beef with garlic, toss with stir-fry veggies and soy sauce. Serve over rice.

Day 3: Sheet Pan Chicken Fajitas
Uses: Chicken
Buy: Bell peppers, onion, tortillas, fajita seasoning
Directions:
Slice and season everything, bake at 400°F for 25 mins. Serve in wraps or over rice.

Day 4: Baked Ziti (Meatless or with Beef)
Uses: Pasta, tomato sauce
Buy: Ricotta or cottage cheese, mozzarella, Parmesan
Optional: Add ground beef
Directions:
Mix pasta, sauce, and cheese, layer, and bake until golden.

Day 5: Chicken Fried Rice (Again!)
Uses: Chicken, rice
Buy: Eggs, frozen mixed veggies
You know the drill — it’s quick, affordable, and always a hit.
Toddler Tips
- Chop chicken parm into bite-size strips and serve with plain pasta.
- For fajita night, offer chicken, peppers, and rice separately.
- Baked ziti and fried rice are always a hit in our house!
Final Thoughts
This week was a good reminder that budgeting doesn’t mean you have to sacrifice the meals that bring you joy. You can eat meals that feel like a treat, even when you’re in the thick of IVF, toddler parenting, or just trying to keep things together.
