Mornings as a working mom can feel like a race before the sun even rises – packing lunches, wrangling toddlers, and trying to get out the door on time. The last thing we need is a complicated breakfast. That’s why overnight oats are such a game changer! With just a few minutes of prep the night (or Sunday night) before, you wake up to a creamy, hearty, and ready-to-eat breakfast that keeps you full until lunch! The best part – in my opinion, it is delicious and something I actually crave! (As someone who isn’t a huge breakfast person, this says a lot). This simple recipe has become my weekday lifesaver, and it’s endlessly customizable so anyone can find a flavor combo they love – and maybe even the whole family can enjoy it!

Creamy Vanilla-Almond Overnight Oats (serves 1)
Ingredients:
1/2 cup old-fashioned oats
1/2 cup unsweetened almond milk (add a splash more if you like it looser)
1/2 or 1 full scoop vanilla protein powder (I use a full scoop)
1 Tbsp almond butter (can eyeball this, and I use vanilla flavor)
1/2 tsp vanilla extract (if your protein powder isn’t strongly flavored – I also eyeball this one)
Pinch of salt
Optional sweetener: drizzle of maple syrup or honey (I use real maple syrup!)
optional toppings: frozen mixed berries, banana slices, chopped nuts, coconut flakes, etc.
Instructions:
- Mix the dry: In a mason jar or other lidded container, stir together oats, protein powder, and a pinch of salt.
- Add the wet: Pour in almond milk and vanilla, then stir until the protein powder is completely dissolved.
- Nut Butter Swirl or dollop: add in the almond butter
- Other toppings: at this time I add in some maple syrup & frozen mixed berries so they’ll thaw in the fridge. If you are adding any other toppings, I recommend waiting until morning.
- Cover & refrigerate overnight or at least 4 hours.
- In the morning, give it a stir, add a splash more almond milk if you’d like, or any other toppings.
*Tip – these keep well for about 3 days in the fridge, so you can easily double or triple the recipe for grab & go breakfasts, then re-prep a few more for the remainder of the week later on!
